SMOKEY BARBECUE SALMON

Smokey barbecue salmon. Barbecue salmon fillets wrapped in pancetta – a tasty alternative for a warm summer day! Grilling salmon is easy and delicious.

Ingredients
800g salmon fillet, skinned and deboned
2 twigs of fresh rosemary
1 clove of garlic
1 red chili pepper
salt and pepper
8 slices pancetta
4 barbecue skewers
2 large sweet potatoes cut into 1cm chips
Olive oil
Salad of your choice
Method
- Heat your oven to 200°C
- Spread your sweet potatoes on a baking tray, drizzle with olive oil, season with salt and pepper, toss to coat. cook in the oven for about 40 minutes.
- Wash the salmon fillet, pat dry and cut into four equal-sized pieces.
- Pull the leaves off the rosemary sprigs and finely chop.
- Finely chop the garlic. Halve the chilli pepper lengthways, remove the seeds and chop it finely.
- Rub the salmon fillets with the rosemary, garlic, chilli, salt and pepper.
- Wrap two slices of pancetta ham around each salmon fillet, fixing in place with a skewer.
- Barbecue the fillets on both sides for 6 minutes.
Serve with the salad and sweet potato chips.
