Mediterranean sea bass with olives, tomatoes and peppers. This dish is so tasty, great on its own but perfect with rice or baby new potatoes.
Ingredients
- 1/2 lb (225 g) Sea Bass Filets
- 1/3 cup kalamata olives or Provencal olives that are not too salty, pitted
- 1 cup Cherry Tomatoes
- 1/4 cup coriander chopped plus more for garnish, coriander
- 2 Garlic Cloves peeled and finely sliced
- 1/2 tsp Paprika
- 1/4 tsp Cumin
- Salt and freshly ground black pepper
- 2 tbsp Olive Oil
- Pine nuts
- 1 Pointy sweet red pepper
Method
- Preheat oven to 400°F (200°C).
- Toast the pine nuts
- In a baking dish, place the olives, sliced red peppers and cherry tomatoes and half of the sliced garlic, with a drizzle of olive oil
- Season with paprika, cumin, salt and pepper.
- Bake for 20 minutes, until peppers and tomatoes are soft
- Add the sea bass fillets, skin side up
- Sprinkle with coriander and garlic and scatter over the pine nuts
- Drizzle with olive oil
- Bake for 15 minutes or until fish is cooked through MEDITERRANEAN SEA BASS WITH OLIVES
