BAKED SAITHE WITH APPLE VINAIGRETTE

Baked saithe with apple vinaigrette. Baked saithe – crispy and golden brown on the outside, juicy and tasty on the inside.

Ingredients

640g saithe fillet, skinned and pin-boned
1 green apple
2 shallots
3tbsp malt vinegar
6tbsp rapeseed oil
6 stalks parsley
8tbsp panko breadcrumbs
4tsp grated  parmesan
2 eggs
4tbsp wholemeal flour
Salt and pepper
