Crispy fish burger with cod. Cod, the American way! Try these delicious, simple and healthy burgers.

Ingredients
800g cod fillets, skinned and pin-boned
8tbsp panko breadcrumbs
1 egg
4 brioche buns
Salad
2 large tomatoes
1/2 red onion
2 stalks parsley
Salt and pepper
Coleslaw
250g white cabbage
1 carrot
1/2 fennel bulb
1 apple
100ml mayonnaise
100ml crème fraîche
1tbsp lemon juice
1tbsp sugar
Black pepper
Method
- Preheat the oven to 200 degrees.
- Dry the cod with a paper towel.
- Mix flour and panko crumbs, and whisk eggs in a separate bowl.
- Dip the cod filet first in the egg and then in the panko mixture.
- Bake in the oven for ca. 20 minutes
- Finely chop cabbage, carrot, fennel and grate the apple.
- Mix mayonnaise, crème fraîche, lemon juice, sugar and pepper, and mix it all together with the vegetables
- Heat the brioche buns slightly in a pan, add salad, coleslaw and the cod burger. Top of with parsley.
