Ingredients
700g trout fillet, skinned and deboned
1tbsp sea-salt
1tbsp olive oil
1tsp pepper
Avocado salsa
1 avocado
1 tomato
1 red onion
1clove garlic
1/2 red chili pepper
1 lime
1tbsp olive oil
salt and pepper
Serve with
300g red lentils
1tbsp olive oil
4tbsp chopped parsley
2tbsp chopped basil
1 lemon
1tsp salt
1/2tsp pepper
Method
- Sprinkle salt on the trout and leave for 10-15 minutes.
- Rinse off the salt, gently dry with a paper towel and cut into portions.
- Brush the trout with olive oil and sprinkle with pepper.
- Grill for 3-4 minutes on each side.
Avocado salsa
- Cut avocado and tomato in small dices, and finely chop red onion, garlic and chili.
- Zest and juice lime.
- Mix the ingredients, add olive oil and taste with salt and pepper.
- Keep in the refrigerator until serving.
Serve with
- Cook lentils as instructed on the package.
- Drain well and add olive oil.
- Finely chop parsley and basil, juice lemon and add to the lentils.
- Season with salt and pepper to taste, and keep covered with a lid until serving.
Serve freshly grilled trout with avocado salsa and lentils.
Tip: The Fjord Trout can also be cook on a griddle pan.
