Mackerel teriyaki salad. Try this easy and delicious salad, rich in omega-3 and health benefits and packed with flavour.

Ingredients
2 mackerel fillets
2 slices of fresh ginger
Herb mustard
1 red onion
1 red bell pepper
Head of lettuce
10 cherry tomatoes
vegetable oil
Teriyaki sauce
2tbsp soy sauce
1tbsp sugar
1tsp mirin
1 garlic clove
Japanese mayonnaise
3 tbsp mayonnaise
2 tbsp soy sauce
1tbsp milk
Method
- Cut mackerel into bite-sized pieces.
- Heat vegetable oil in a pan, cut red onion and capsicum into thin slices and fry until browned and softened
- Tear lettuce into bite-size pieces, cut herb mustard into 2 to 3 cm lengths and drain in water to crisp them up. Cut the cherry tomatoes in half.
- Place the drained salad in a dish, put the heated vegetables on top of it, and serve with Japanese mayonnaise sauce in a small dish on the side.
- Place the mackerel in the pan side by side, avoiding overlapping.
- Fry mackerel to brown, and finish with teriyaki garlic sauce.
- Put the ginger on top, place the lid directly on the food, and cook over medium heat for 10-12 minutes. Then add the mackerel to the salad.
- Boil down the remaining sauce slowly and pour it over the mackerel.
Tips: Frying mackerel to a golden brown is the key. It helps to preserve the taste. If you use Teflon coated pans, vegetable oil is not necessary
