Ingredients
400g smoked trout
4pcs potato griddle cake (potato scone)
Rocket
Creamy goat cheese cream
1tbsp chives
100g creamy goat cheese spread
1/2 tsp Dijon mustard
Salt and pepper
3tbsp light sour cream
Sauce
2tbsp runny honey
1tbsp Dijon mustard
1tbsp whole grain mustard
100ml olive oil
Salt and pepper
Method
- Cut the smoked trout into thin slices.
Cream goat cheese cream
- Finely chop chives and mix with the rest of the ingredients for the cream.
- Taste with salt and pepper.
Sauce
- Combine all the ingredients for the sauce.
- Taste with salt and pepper.
Assemble
- Spread a thin layer of the goat cheese cream on the griddle cakes, place slices of Fjord Trout over and spread with a thin layer of sauce.
- Top with rocket.
- Roll the griddle cake together, cut into suitable bites and serve.
