FOOD AUTHENTICITY AND DEFENCE TRAINING COURSES

Food authenticity and defence training courses. Starting in September 2021 Seafish will offer two training courses; a two-day food authenticity course and a one-day food defence course.

Food Authenticity and Integrity Verification 

  • This course is suitable for food business managers, enforcement officers and auditing professionals.
  • It is a two-day advanced course.
  • People who complete the course will receive a joint award from REHIS and Seafish.
  • The course is delivered remotely via Zoom or Teams.g
  • Course materials will be provided with the joining instructions.

Content

  • Utilises the latest thinking in OCV methodology* for business operators.
  • Roles of TACCP, VACCP, QACCP and HACCP
  • Detailed examination of two complex seafood products;
  • Gap analysis and triangulation;
  • Scenario based delivery using case studies;
  • Systematic approach to verification;
  • Delivered remotely via Teams or Zoom.

* OCV or official controls verification is a powerful methodology developed by Food Standards Scotland and adapted by Seafish to be used by food business operators. Business operator control verification (BOCV) is a new, powerful tool and (so far as Seafish know) unique to this course.

The 2 day programme is available from the 28th September 2021, and Seafish are taking bookings now.

  • Team based approach to managing food chain vulnerabilities and defence.
  • Delivered by the University of Lincoln.
