Raising the bar: Inside the Master Fishmonger Standards.

Fishmongering is a craft built on knowledge, precision and trust. But what does it really take to become one of the best in the trade?

Fish Focus spoke with Julie Waites, programme lead for the Master Fishmonger Standard at the UK Seafood Federation, to learn more about the accreditation scheme designed to recognise excellence across the fishmongering profession.

What inspired the Master Fishmonger Standards?

According to Julie, fishmongering is often misunderstood as simply selling fish over a counter:

“Fishmongering is far more than that,” she explains. “It requires deep product knowledge, technical skill, and an understanding of sourcing and sustainability. The standards were developed to recognise and celebrate those fishmongers who truly excel in all aspects of the profession.”

The Master Fishmonger Standard was developed by the historic Worshipful Company of Fishmongers (also known as The Fishmongers’ Company) to celebrate skilled craftsmanship, quality seafood and responsible, sustainable practices within the profession.

Recognising achievement across all levels, the standard provides a system of nationally recognised grades reflecting levels of attainment within the fishmonger and seafood processing trade. By rewarding excellent practice, the initiative aims to encourage high levels of skill and promote greater knowledge of the seafood industry.

What exactly are the Fishmonger Standards?

Julie describes the programme as the “gold standard” for those who handle, process and prepare fish and seafood for the consumer:

“It’s a comprehensive assessment process designed to ensure that a person is just not handling fish but is a genuine expert in their field,” she says. “The standards cover everything from sustainability and sourcing to knife skills and customer interaction.”

As a truly independent organisation, the UK Seafood Federation governs the standard, while training and assessments are delivered through Company-approved regional delivery centres and assessors.

The programme evaluates candidates on the full breadth of their professional capabilities, recognising those who demonstrate the highest levels of skill, knowledge and commitment to quality.

There are various levels of standard that have been developed over the years including:

MFS Recognised Fishmonger

The MFS Recognised Fishmonger accolade is reserved for those with at least two years’ experience as a fishmonger.

MFS Recognised Fishmongers are driven, have clear career aspirations, and take the time to invest in their learning. With their dexterous skills and passion for seafood, they are always on hand to craft the finest fish and shellfish products.

MFS Recognised Fishmongers are knowledgeable about a range of commercial species and understand the processes involved in selecting, purchasing, handling and storing seafood. With their thorough understanding of food hygiene and health and safety procedures, they take responsibility for their work and are conversant with customers about the health benefits and different methods of preparation available.

MFS Advanced Fishmonger

The MFS Advanced Fishmonger accolade is reserved for those with at least five years’ experience as a fishmonger.

MFS Advanced Fishmongers have a significant role to play in the food chain, both as a procurer and provider of food. They understand the importance of sourcing products that come from environmentally and ethically sound fisheries and help to increase consumer confidence in the seafood industry.

MFS Advanced Fishmongers inspire the fishmongers of tomorrow through leadership, forming partnerships with those who share their vision for a healthy, prosperous and sustainable fish and fisheries sector. To be an MFS Advanced Fishmonger is to be an innovator, a forward thinker and a catalyst for change.

MFS Master Fishmonger

The MFS Master Fishmonger accolade is reserved for those with at least ten years’ experience as a fishmonger.

From sea to plate, MFS Master Fishmongers demonstrate excellence in, and dedication to, their field of work within the seafood industry. As a purveyor of the finest quality seafood, their practical skills know no boundaries and they do business with integrity, standing by their principles of exemplary customer service. Over the years, they have built strong relationships to ensure the highest quality standards and have helped to influence and improve practices across the supply chain.

Achievement of the MFS Master Fishmonger accolade is significant, reserved for only the finest of fishmongers. It demonstrates their broad and balanced experiences within the industry, it celebrates their successes as a steward of the sea and commends their continued commitment to the trade. It is an award that comes with great prestige and honour, as well as responsibility.

MFS Companion Fishmonger

The MFS Companion Fishmonger tier recognises and rewards outstanding lifetime achievements in the fishmonger trade. MFS Companion Fishmongers demonstrate a passion for sustainable and responsible sourcing, and have dedicated their careers towards improving consumer confidence in the seafood industry within the UK.

MFS Craft Fishmonger

The MFS Craft Fishmonger accolade is reserved for those with at least four years’ experience in a seafood processing, fishmonger environment or as a fishmonger trainer.

MFS Craft Fishmongers are highly skilled and experienced in the art of preparing a range of fish and shellfish products. Their seafood is prepared to an excellent standard with minimum loss of yield and under demanding time constraints.

Maintaining strict food hygiene standards and HACCP control is extremely important to a Craft Fishmonger, which is why they take pride in their appearance and care after their Personal Protective Equipment and tools. Craft Fishmongers are keen to teach others their skills and take a wider interest in the entire seafood supply chain.

The scheme is also planning to add a standard for seafood chefs.

YOUNG FISHMONGER OF THE YEAR

Why are the standards important for the industry?

The Young Fishmonger Award rewards young people who have made outstanding contribution to the fishmonger trade. Combining technical knowledge with passion for the industry and commitment to sustainable and responsible sourcing applicants must demonstrate both their knife skills and their support for the trade.

The award recognises that both seafood preparation and customer service skills are key to high quality fishmongering.

The Young Fishmonger Award is open to all fishmongers under the age of 25 who are employed within the sector. In order to apply applicants must submit:

“It’s a fantastic way for fishmongers to showcase their expertise,” says Waites. “Achieving Master Fishmonger status sets you apart within the industry and demonstrates a real commitment to excellence.”

But the benefits extend beyond the trade.

“For customers, it provides reassurance,” she adds. “When you buy from a fishmonger who has achieved this standard, you know you’re receiving expert advice, high-quality seafood and products that have been responsibly sourced.”

What does it take to become a Master Fishmonger?

Waites emphasises that achieving the standard is not easy.

“It’s certainly not a walk in the park,” she says. “Candidates must demonstrate expertise across several key areas of working with fish.”

These include:

  • Product knowledge – understanding different species, their seasonality and how to identify top quality fish
  • Sustainability awareness – knowledge of responsible sourcing and sustainable fishing practices
  • Knife skills – the ability to fillet, skin and prepare fish accurately while minimising waste
  • Food safety and hygiene – maintaining the highest standards in handling and preparation
  • Customer service – building relationships with customers and offering expert guidance

“Ultimately, it’s about demonstrating mastery of the craft,” Julie explains.

How can customers identify a Master Fishmonger?

Fishmongers who have successfully completed the programme are encouraged to display their credentials t their workplace, whether in store, social media etc

“Customers should keep an eye out for the certification,” says Waites. “And don’t be afraid to ask your local fishmonger about their training and qualifications.”

Elevating the future of fishmongering

For Waites, the standards play an important role in strengthening the profession and promoting seafood expertise within the retail sector.

“The Master Fishmonger Standards help raise the bar across the industry,” she says. “They highlight the professionalism, knowledge and passion that great fishmongers bring to their work every day.”

CHEF TIER

The UKSF is developing a MFS Chef Tier, recognising that there are many chefs who prepare seafood on a daily basis. This Tier would assist their recognition to seafood.

By recognising excellence and encouraging continuous development, the programme aims to ensure that the next generation of fishmongers continues to guide consumers towards quality, sustainable and responsibly sourced seafood.
