BAADER UNVEILS FUTURE-READY FISH PROCESSING

BAADER unveils future-ready fish processing solutions. Read Fish Focus’ latest publication focusing on seafood processing.

At Seafood Expo Global (SPG) earlier this year, BAADER displayed processing machines for various species and processes, as well as their latest developments that focus on food safety and animal welfare.

“From individual machines to complete line solutions, BAADER provides tailored offerings without compromising on quality, throughput, or yield”, said Dennis Schreiber, CSO & Managing Director Business Unit Fish at BAADER. “By this, we position ourselves as a one-stop shop for reliable fish and seafood processing equipment.”

Visitors to the booth at SPG were able to learn more about BAADER’s innovative and reliable equipment for various processing steps, including stunning, bleeding, gutting, heading, filleting, trimming, grading, and packaging. The solutions are designed to help customers achieve long-term economic sustainability while providing high-quality, nutritious, and safe seafood to consumers worldwide.

BAADER Sets New Standards in Fish Processing

Animal Welfare

Prioritising animal welfare, BAADER’s advanced stunning and bleeding solutions comply with the latest standards and maintain outstanding raw material quality. Independent organisations have verified the reliability and safety of our portfolio using Electroencephalogram (EEG) measurements, confirming the benefits of percussive stunning and exceptional bleeding results.

Superior Hygienic Design for Food Safety

The BAADER 144 gutting machine sets new benchmarks in hygiene and food safety. An integrated inspection camera monitors and evaluates each gutting operation, identifying defects based on customizable recipe settings. But that’s not all: Its closed design not only prevents aerosol dispersion for a significantly enhanced hygiene standards, it also enables the integration of a tool- and machine-CiP (Clean in Place) system for automatic cleaning procedures that minimise bacterial load and improve overall food safety. Integrated into a full-line solution, the BAADER 144 maximises operational efficiency.

Flagship Salmon Filleting

The BAADER 581 Pro filleting machine is renowned for delivering unbeatable yield and reliable, intelligent salmon filleting. Recognised as one of the most powerful and advanced filleting machines globally, it ensures the most reliable yield, satisfying numerous customers.

Next-Level Evaluation

The BAADER 1860 fillet inspector complements the processing line by utilising a vision system that independently evaluates each fillet from both sides e.g. colour, melanin spots, gaping, skin wounds, exact dimensions and weight. This information is transferred to subsequent processes, such as fillet distribution or packing solutions.

Additionally, the BAADER B’Logic software collects and stores quality data images for raw material analysis and finished product traceability.

BAADER UNVEILS FUTURE-READY FISH PROCESSINGIntegrated Digitalisation

As a full-solution on-demand technology provider, BAADER offers dedicated food processing software tools that enhance traceability, production, and quality control. These software solutions assist in making informed decisions early in the process, fulfilling the growing demands for food safety, better raw material utilisation and sustainability.

Trusted Whitefish Portfolio

Heading is a crucial step in fish processing that directly impacts efficiency, yield and overall product quality. A precisely executed heading process minimises waste, ensures consistent output, and maximises the value of each fish. The IS-026 heading machine delivers exactly that – reliable performance and high, uniform yield.

At the heart of the processing line is filleting. And the BAADER 189 Pro sets a new benchmark for whitefish. Building on the success of the BAADER 189, this latest evolution delivers cleaner cuts, higher yield, and smarter efficiency. It empowers processors to process fish faster, cleaner, and with reduced energy consumption.

Every fillet deserves a perfect finish. The BAADER 52 Neo is a high-speed, durable skinning machine engineered for both shallow and deep skinning. Robust, reliable, and enhanced for performance, it ensures a flawless finish every time.

Ingenious Pelagic Pin-boning

The BAADER 221 solution for heading, gutting, and filleting, combined with the AI-controlled automatic pin bone remover TRIO FDP 2000-4, ensures precise, automatic pin bone removal while maximising efficiency and sustainability. Designed for both fresh and sub-chilled fish, this innovative solution streamlines mackerel processing without the need for additional cooling.

By-product Valorisation

The BAADERING technology gently separates soft and solid components from fish remains, paving the way for value-added by-products. The remaining solid components can be further processed into advanced applications like cosmetics, nutraceuticals, and pet food. These state-of-the-art solutions are designed to maximise efficiency at every step of the fish processing cycle, contributing to sustainable practices and fostering innovation in by-product valorisation.

Often underestimated, descaling plays a vital role in industrial fish processing. Poor descaling can reduce product quality, compromise yield, and increase maintenance costs. BAADER’s precision descaling systems are designed to address these challenges ensuring consistent product quality with intact skin for consumption or enabling the reuse of fish skin for value-added applications.
