MACKEREL AND CHEESE TARTS WITH MACKEREL SALAD

Mackerel and cheese tarts with mackerel salad. No fuss, easy cooking, perfect for a picnic on these long, hot summer days.

Ingredients
4 ready baked short crust tarts
50g feta cheese, crumbled
100g grated cheese of your choice
100g cottage cheese
1 egg
20ml cream
1tsp chopped herbs – chives or parsley or dill
2 smoked mackerel fillets, flaked
Method
- Mix all the ingredients for the tart together and add half the flaked mackerel
- Pour into the tart cases and cook in the oven at 170c until just set, about 15 minutes
- Toss the remaining mackerel with salad ingredients of your choice
- Place the mackerel tarts on to serving plates and pile the salad on top, drizzle with a little dressing and serve
