Carsoe Launches Heading and Gutting Machine CS3063 for High-Quality Whitefish Processing

Compact, operator-assisted unit delivers precise head cuts, reliable gutting, fast cleaning, and simple maintenance, built to integrate easily in both new and existing factory layouts.

Carsoe today announced the launch of the Heading and Gutting Machine CS3063 (patent pending), a standalone, operator-assisted solution designed for efficient and accurate deheading and gutting of cod, pollock, and haddock.

Built as a compact unit for medium to large-scale processing, the CS3063 is engineered to deliver consistent results shift after shift, without adding complexity to the factory floor.

Built around the realities of the processing floor

Processors face the same daily constraints: limited space, pressure on throughput, hygiene windows that can’t slip, and a constant focus on yield. The CS3063 is designed to meet those constraints with four practical strengths:

  • Compact design for integration: The CS3063 fits into new or existing layouts, including areas where ceiling height has previously been an issue.
  • High deheading and gutting quality: The cutting mechanism supports precision and yield optimization with minimal meat loss and consistent head cuts. The gutting module draws on proven KM Mark technology for reliable, precise operations.
  • Easy, efficient cleaning: Smooth surfaces, minimal dirt traps, and CIP (Cleaning-In-Place) compatibility where feasible helps crew clean faster and restart on time.
  • Simple service and maintenance: A cost-effective design with fewer spare parts and maintenance that can be handled by an in-house team without specialized technicians.

How the CS3063 works

During operation, an operator manually inserts the fish into moving holders. Once secured, the machine runs the process automatically: deheading first, using Carsoe’s newly developed cutting mechanism, followed by gutting via an underside station inspired by Carsoe’s proven KM gutting technology. Finished fish are released into a discharge chute for onward processing or packaging.

Developed based on customer input

Carsoe developed the CS3063 based on direct input from processors, translating real operational needs into a machine that prioritizes reliability, yield, cleanability, and serviceability.
