Farmed dentex from Med scoops taste award. Mediterranean fish farmer, Cromaris, latest farmed species, dentex, which is unique in the world, has also been awarded the distinguished Superior Taste Award for 2021.

This prestigious award is given by the International Taste Institute in Brussels to products that meet the strict criteria of a jury made up of the most respected chefs from all over Europe.

The products are evaluated by a blind test method based on appearance, smell, texture and taste, with the judges not knowing the brand or origin of the tested product. Dentex extended the list of Cromaris species that have already been awarded this prize, which includes sea bass, sea bream, meagre and amberjack. This recognition has made Cromaris the only producer of quality Mediterranean fish with as many as five awarded fish species.

The company’s headquarters and the processing facility are located in Zadar. Of the total of 6 farms, one is located in Istria (Budava) and 5 in the Zadar region, Central Adriatic (Lamjana Košara, Velo Žalo, Žman and Kudica). The farming site selection criteria depended on the crystal clean sea and untouched, pristine nature, far away from any potential pollutants, but also on the Spatial Plans of the Zadar and Istria Counties, according to which the above mentioned positions were assessed as suitable for white fish breeding. In 2015 one of the most modern facilities for premium quality Mediterranean fish spawning in Europe was opened in Nin, at the location of the old hatchery dating from 1981.
