PUMPKIN PUREE SOUP WITH BAKED SALMON

Ingredients

1 pumpkin
Coconut milk
Ginger root
2 salmon fillets
Chilli pepper
Paprika powder
Vegetable stock
Balsamic sauce
Sesame seeds

Method

  • Heat the oven to 180° and bake the oven for 15 minutes. PUMPKIN PUREE SOUP
  • Cut the oven into cubes. Cook in 1 litre of vegetable stock for 20 minutes, until soft.
  • Finely chop the chilli (discard the seeds).
  • Finely grate about a thumb sized piece of ginger.
  • Puree the pumpkin and add the coconut milk, chilli, ginger and paprika. Season with salt and pepper.
  • Fork the salmon and add to the soup.
  • Add a drizzle of balsamic glaze, sprinkle with sesame seeds. Enjoy!

Classified as an oily fish, salmon is considered to be healthy due to the fish’s high protein, high omega-3 fatty acids, and high vitamin D content. Salmon is particularly high in selenium, an important nutrient that is involved in DNA synthesis, thyroid hormone metabolism, and reproductive health. What’s more, salmon is rich in vitamin B12, which is necessary for producing red blood cells and regulating the health of the central nervous system.
