OVEN-BAKED SAITHE WITH GINGER AND ASPARAGUS

Oven-baked saithe with ginger and asparagus. In this recipe the saithe gets a new and Asian twist and is served with asparagus. Sesame oil also goes well with fish.

Ingredients

800g saithe fillet, skinned and pin-boned
1tbsp fresh ginger
2tbsp pickled ginger
2tbsp peanut oil
2tbsp soy sauce
1tbsp sesame oil
Salt

Aluminium foil

Serve with

600g asparagus

Method

  • Preheat the oven to 200 °C.
  • Cut the saithe in servings and place in a greased oven-proof dish.
  • Thinly slice fresh and pickled ginger, mix with peanut oil and soy sauce, and spread over the saithe.
  • Cover the dish with aluminium foil and bake in the oven for approx. 15 minutes.
  • Drizzle with sesame oil and sprinkle with salt when the dish is done.

Serve with cooked asparagus.
