BROWN CRAB AND SWEETCORN FRITTERS

Brown Crab and Sweetcorn Fritters with a Herby Mayonnaise. Great for a party or a starter, these little fritters are sure to be a big hit.

Ingredients

500g cooked brown crab meat
2L vegetable oil
100g sweetcorn kernels
25g coriander, chopped
1 red chilli, finely chopped
75g cornflour
75g gram flour
130ml chilled fizzy water
Herby Mayonnaise
100ml mayonnaise
1 bunch assorted fresh green herbs
25ml fresh lemon juice

Method

  1. Fill a deep fat fryer with vegetable oil and heat to 180°C.
  2. Put the crabmeat, sweet corn, chopped coriander and chilli in a bowl and mix together, keeping it quite chunky. Season with salt and cracked black pepper.
  3. In a separate bowl, mix the two flours together. Add the water slowly to the flour, mixing continuously until you create a smooth batter. Add the batter to the crab and mix in well. To make the herby mayonnaise combine the mayo, chopped fresh herbs, and the lemon juice.
  4. Spoon 1 tablespoon of the crab mixture into the hot oil, repeat using all the mixture and cooked until crisp and golden brown.
  5. Season the fritters with sea salt and serve with the herby mayonnaise. BROWN CRAB AND SWEETCORN FRITTERS
