MEDITERRANEAN SEA BASS WITH OLIVES

Mediterranean sea bass with olives, tomatoes and peppers. This dish is so tasty, great on its own but perfect with rice or baby new potatoes.

Ingredients

  • 1/2 lb (225 g) Sea Bass Filets
  • 1/3 cup kalamata olives or Provencal olives that are not too salty, pitted
  • 1 cup Cherry Tomatoes
  • 1/4 cup coriander chopped plus more for garnish, coriander
  • 2 Garlic Cloves peeled and finely sliced
  • 1/2 tsp Paprika
  • 1/4 tsp Cumin
  • Salt and freshly ground black pepper
  • 2 tbsp Olive Oil
  • Pine nuts
  • 1 Pointy sweet red pepper

Method

  1. Preheat oven to 400°F (200°C).
  2. Toast the pine nuts
  3. In a baking dish, place the olives, sliced red peppers and cherry tomatoes and half of the sliced garlic, with a drizzle of olive oil
  4. Season with paprika, cumin, salt and pepper.
  5. Bake for 20 minutes, until peppers and tomatoes are soft
  6. Add the sea bass fillets, skin side up
  7. Sprinkle with coriander and garlic and scatter over the pine nuts
  8. Drizzle with olive oil
  9. Bake for 15 minutes or until fish is cooked through MEDITERRANEAN SEA BASS WITH OLIVES
