OYSTERS AU GRATIN

Oysters au gratin. A quick and easy dish that is not only luxurious, but will also improve your love life – great as a starter!

Serves: 2

Ingredients

  • 6 x fresh oysters, cleaned and shucked
  • 2 x streaky bacon rashers, finely chopped
  • 30g (1oz) celery, finely chopped
  • Salt and black pepper
  • 30g (1oz) grated mozzarella cheese

Method

  1. In a small pan cook the bacon for 1-2 minutes until crispy.
  2. Add the celery and asparagus and season.
  3. Spoon the bacon and asparagus mixture over the oysters.
  4. Sprinkle over the cheese.
  5. Cook the oysters under a medium grill for 3-4 minutes until the cheese is golden brown and melts. OYSTERS AU GRATIN

Jonathan Swift is quoted as having said, “He was a bold man that first ate an oyster” Evidence of oyster consumption goes back into prehistory, evidenced by oyster middens found worldwide. Oysters were an important food source in all coastal areas where they could be found, and oyster fisheries were an important industry where they were plentiful. Overfishing and pressure from diseases and pollution have sharply reduced supplies, but they remain a popular treat celebrated in oyster festivals in many cities and towns.

It was once assumed that oysters were only safe to eat in months with the letter ‘r’ in their English and French names. This myth is based in truth, in that in the Northern Hemisphere, oysters are much more likely to spoil in the warmer months of May, June, July, and August.
