HOMEMADE FISH AND CHIPS

Homemade fish and chips. Simple, fresh ingredients, you really can’t go wrong with fish and chips, it’s always a winner!

Ingredients

Fish

200g cod loins
Salt to taste
Lemon zest
sunflower oil

Chips

800g Maris Piper potatoes
sunflower oil

Spice blend

200g flour
4g smoked paprika
2g onion powder

Batter

550g beer
50g vodka
400g flour
10g salt
10g baking soda

Tartar sauce

250g mayonnaise
50g capers
1 tbsp. finely chopped shallots
½ lemon
2 tbsp. finely chopped dill
Sea salt
Pepper

Preparation

Fish

Slice fish to evenly sized pieces.
Spread with salt and lemon zest.
Refrigerate for 15 min.
Rinse in cold water and wipe dry.

Chips

Cut the potatoes into finger-sized chips, leave the skin on.

Batter

Mix flour, salt, baking soda and vodka in a bowl.
Slowly add the beer while stirring.

Tartare sauce

Add capers and shallots to mayonnaise and stir.
Add dill and lemon juice.
Salt and pepper to taste.

Spice blend

Mix flour with smoked paprika and onion powder.

Cooking

Fish

Cover fish with the spice blend.
Dip into the batter.
Deep fry in oil at 180°C for 4-5 min.
Turn regularly for even cooking.

Chips

Half fill a heavy pan with oil, heat to 140°C.
Lower the chips slowly into the oil in a sieve, cook for 8 minutes, remove and cool on a tray.
Heat the oil up to about 180°C, lower the chips in again in batches, so as not to cool the oil. Cook until golden.
Remove the chips, put into bowl lined with paper towel, season and shake. Serve immediately.
