SALMON BURGERS

Salmon burgers. You will love these salmon burgers, a nice change from chicken or beef and so much healthier.

Ingredients

600g salmon fillet
300ml Greek yoghurt
1 cucumber
1 clove garlic
1 egg
250ml milk
1tsp medium curry powder
3tsp cornflour
1tsp flat leaf parsley
1tsp dried mint
½ tsp mild chilli powder
1 baby gem lettuce
1 large tomato
olive oil
salt and pepper

Method

  • Cut the salmon into pieces and place in the food processor with the curry powder, salt, corn flour, and finely chopped chilli and parsley.
  • Stir in the eggs and milk.
  • Season with salt and pepper.
  • Pour the oil into a frying pan and heat.
  • With wet hands, form small patties and place into the oil. Fry for approx. 3 minutes on each side until golden brown.
  • For the tzatziki, grate the cucumber and garlic clove and mix with the natural yoghurt and dried mint. Season with salt and pepper to taste.
  • Serve in burger baps with shredded lettuce and sliced tomatoes.
