CRISPY COD WITH MASHED POTATOES

Crispy cod with mashed potatoes. Mashed potatoes and crispy pan-fried cod – it doesn’t have to be difficult to serve fish on a hectic day.

Ingredients
600g cod fillet
2 eggs
3tbsp flour
20 ml breadcrumbs
salt and pepper
butter
rapeseed oil
Mashed Potatoes
500g potato, floury type
2tbsp butter
200ml milk
salt and pepper
Serve with
4tbsp pickled gherkins
100ml sour cream
Fried onions
Method
- Cut the fish into even servings.
- Whisk eggs together.
- Dredge the cod in flour, then in egg and at last in breadcrumbs.
- Sprinkle with salt and pepper.
- Pan-fry the cod on a medium/high heat in butter and rapeseed oil, 3-4 minutes on each side.
Mashed potatoes
- Peel potato, dice and cook tender in unsalted water.
- Mash the potato and mix with butter and milk to a nice consistency.
- Taste with salt and pepper.
Serve the cod with the mashed potatoes, pickled gherkins, sour cream and crispy fried onion.
