HERRING WITH APPLE AND BROWN BUTTER
Herring with apple and brown butter. Tart apples and a smooth brown butter sauce is perfect for herring. A new dish in the “Herring re:invented” series by René Stein, featuring unusual flavours that allow the herring to shine in a whole new light.

Ingredients
8 smoked herring fillets
Brown butter
50g butter
20g maple syrup
10g balsamic vinegar
Apple vinaigrette
1 green apple
10ml white wine vinegar
30ml rapeseed oil
salt and pepper
maple syrup
Garnish
toasted panko breadcrumbs
zest of 1 lime
Method
Use a blowtorch to scorch the fillets and keep warm.
Mix the butter with the other ingredients and emulsify. Remove from the heat.
Peel the apple and cut into small cubes. Discard the core. Marinate with the other ingredients and season.
Spread the brown butter and place the fillets on top.
Add the apple before finally sprinkling with the Panko breadcrumbs and lime zest.
