SALMON WITH SPINACH

Salmon with spinach, cream and parmesan. Salmon is perfect for baking in the oven, and can be varied in numerous of ways. Here it’s baked with spinach, cream and parmesan.

Ingredients

600g salmon fillet, skinned and deboned
150g frozen spinach
150g parmesan cheese
200ml single cream
olive oil
salt and pepper

Method

  • Preheat the oven to 175 °C.
  • Rinse the spinach and place in an oven-proof dish greased with olive oil.
  • Add cream to the dish and place the salmon fillet over.
  • Season with salt and pepper, and sprinkle with grated parmesan.
  • Bake in the oven for approx. 20 minutes.
  • Serve with mashed potatoes or rice.
