SKEWERS WITH HERRING AND HERBS

Skewers with herring and herbs and vegetables on the side. This is a good summer dish that also can be pan-fried.

Ingredients

8 herring fillets
Salt and pepper
8 wooden skewers

Relish

4tbsp green olives
1 large pickled gherkin
1tbsp capers
1/4 of a clove of garlic
1tbsp fresh parsley
3tbsp olive oil
1 lemon

Method

  • Soak the wooden skewers for approx. 20 minutes.
  • Thread the herring fillets on the skewers and sprinkle with salt and pepper.
  • Grill the skewers for approx. 1 minute on each side.

Relish

  • Finely chop olives, gherkin, capers, garlic and parsley, and mix with olive oil.
  • Taste with lemon juice.

Serve the skewers with the relish and lemon zest as garnish. Perfect with baby new potatoes or rice and salad.
