OVEN BAKED COD
Oven baked cod. Tender and mild cod flavours blend perfectly with simple ingredients to make a delicious, healthy dinner, which is really easy to make.

Ingredients
Fish
300g cod
Salt and pepper
3tbsp. olive oil
Bread coating
100g Japanese bread crumbs (panko)
50g grated parmesan cheese
5g lemon zest
1tbsp. sea salt
30ml olive oil
5g finely chopped parsley
Other ingredients
Cherry tomatoes
Broccolini
½ lemon
Method
Fish
Mix bread crumbs, parmesan cheese, parsley, olive oil, lemon zest and salt.
Season fish with salt and pepper.
Cover in the bread crumbs and drizzle with olive oil.
Cook in the oven with broccolini and tomatoes at 180°C for 12-15 min.
Finish with a squeeze of fresh lemon juice.
