RISOTTO WITH PRAWNS AND MUSSELS

Risotto with prawns and mussels. Risotto is a classic dish that goes well with prawns and mussels. This tasteful recipe is worth every minute it takes to make.

Serves: 4

Ingredients

100g prawns
100g shelled mussels
2 carrots
1 onion
1 clove of garlic
2tbsp olive oil
300ml risotto rice
100ml white wine
900ml vegetable stock
100 ml peas
100ml parmesan cheese
Salt and pepper

Method

  • Finely dice carrot.
  • Finely chop onion and garlic, and sauté tender in olive oil.
  • Add risotto rice and mix well.
  • Pour in white wine and cook it all in.
  • Add the finely diced carrot.
  • Add  a little of the hot vegetable stock, stirring well, until evaporated, then add some more and repeat..
  • Mix in prawns, mussels, peas and grated parmesan. Season with salt and pepper to taste.

Serve freshly made.
