GRILLED MACKEREL WITH COURGETTE AND TOMATO

Grilled mackerel with Courgette and tomato. Grilled mackerel, seasoned with salt, pepper and lemon, and the vegetables with rosemary which gives it a sweet, exotic touch.

Ingredients
Fish
4 mackerel fillets
2 tsp salt
0.5 tsp pepper
1 tbsp lemon juice
2 courgettes
Olive oil
Fresh rosemary
Potato salad
700g baby new potatoes
4 spring onions
Mayonnaise
Paprika
Method
Fish
Cut mackerel into portions.
Sprinkle with salt, pepper and lemon juice, and brush with oil.
Fry on the grill for approx. 2 minutes on each side.

Potato salad
Cut the potatoes into !/2cm slices
Boil the potatoes in salted water until just tender, drain and leave to cool
Finely slice the spring onions
Toss the potatoes in mayonnaise and sprinkle paprika over the top
Serve the grilled mackerel with vegetables, potato salad and bread.
