SMOKED TROUT IN POTATO GRIDDLE CAKE

Smoked trout in potato griddle cake with goat cheese cream. This is the perfect recipe for tapas or snacks. Potato griddle cake with smoked Fjord Trout and a creamy goat cheese cream is as fresh as it looks.

Ingredients

400g smoked trout
4pcs potato griddle cake (potato scone)
Rocket

Creamy goat cheese cream

1tbsp chives
100g creamy goat cheese spread
1/2 tsp Dijon mustard
Salt and pepper
3tbsp light sour cream

Sauce

2tbsp runny honey
1tbsp Dijon mustard
1tbsp whole grain mustard
100ml olive oil
Salt and pepper

Method

  • Cut the smoked trout into thin slices.

Cream goat cheese cream

  • Finely chop chives and mix with the rest of the ingredients for the cream.
  • Taste with salt and pepper.

Sauce

  • Combine all the ingredients for the sauce.
  • Taste with salt and pepper.

Assemble

  • Spread a thin layer of the goat cheese cream on the griddle cakes, place slices of Fjord Trout over and spread with a thin layer of sauce.
  • Top with rocket.
  • Roll the griddle cake together, cut into suitable bites and serve.
